This is a relatively easy side dish. When I don’t know what else to make, this is definitiely a winner. It has simple ingredients (you can use bacon instead of proscuitto) and it tastes pretty good.

Note, I also have a chive plant just outside my door. Need any chives? It grows like a weed.

Recipe:

2 cups peas, frozen
5 slices of proscuitto or bacon
1 egg
1/8 cup milk
1/2 cup parmesan
1 TBSP chives, minced
salt and pepper, to taste

Cut the bacon/proscuitto and crisp up in a pan. If using proscuitto you will probably need a little olive oil and it will crisp up pretty fast.  Remove from pan and drain the oil/grease off.

Boil a pot of water for the peas. Meanwhile, mix the egg, milk, parmesan, chives, salt and pepper. You want it to warm up a bit to room temp while you are cooking the rest.

When the water is ready, put the peas in for a few minutes. You don’t want them overdone. When they are done cooking, put immediately in the egg mixture and mash it all up together using a potato masher. I just do a rough mash. When it is all incorporated together, put in a serving bowl and top with the prosciutto or bacon.  (If the mixture is too cold and doesn’t firm up, just put it back in the pan that you boiled the peas in and let it warm up a bit)

I served this alongside grilled shrimp with a sweet chili sauce over them.
