First off can we all please bow our heads to somberly recognize the demise of my online grocer that delivered food and sundries to my doorstop?  In two weeks they are closing up shop.  Life as a working mother just got a bit harder and more frustrating.  I hate grocery shopping.  It’s like driving in rush hour traffic.  HATE IT.  There is another online grocer in the area but they don’t deliver to our zipcode yet.  You should see the tears running down my cheeks, it’s pitiful, really.

My mother has made this salad countless times for summer picnics and it is always a hit.  It isn’t one that you can eat the next day because the chips wilt and get soggy after it has been mixed.  Hopefully that won’t be a problem, though, since it is super yummy.  This is a salad that has some options.  Once the sauce is made, you can choose the veggies and type of chips to put in it.  My favorite for the chips are regular Doritos or Lime flavored Tostidos.

Sauce:
2 cups Mayonnaise
1/3 cup milk
1/3 cup taco sauce (you choose the temperature)
1/2 package taco seasoning

Salad:
1 lb hamburger
1/2 package taco seasoning
1 package shredded taco cheese
I head of iceberg lettuce, cut up
1 red pepper, minced
1 red pepper, minced
3-4 spring onions or 1 small vidalia onion
1 small can minced black olives
2 avocados, cut in small pieces (so not an overipe one – needs to be a little firm)

1/2 package of crushed chips

Mix the sauce up and adjust the taste as needed.  This is approximate…the way my mother and I cook. 😉  Brown the hamburger and mix in the seasonings.  Let the hamburger cool.  Mix all the veggies together. Layer: veggies, cooled hamburger, cheese, and sauce.  Take to fun party shindig.  Mix everything together with the crushed chips just before serving.  Eat lots of it.
