My children…you know the ones that don’t actually like to eat anything other than fruit, cheese, yogurt and chocolate…they ate FISH! And I’m not talking about the cardboard fishsticks with breading on them. Real. Actual. Fish. Without it having been dipped in tartar sauce…AMAZING!
How did I perform such a feat?? Brian got some good fish (halibut) and we grilled it on a cedar plank (you can get about 8 for $8 at Costco) and used a spice rub. Yumm!
We used two different spice rubs and both were good, but Kai much preferred the curry one. This makes enough for more dishes down the line, so don’t use the whole thing on one fish. I think about 1 TBSP per big fillet is plenty, so use less for the smaller filets. This would probably be good on really any white fish and the second rub was recommended for salmon.
Curry Mustard Spice Rub
Recipe:
2 TBSP Salt
1 TBSP Brown Sugar
1 TBSP Black pepper
1 TBSP Garlic Powder
1 TBSP Dried Mustard
1 TBSP Curry
Mix all together and rub on fish.
Coastal Cuisine Dry Rub
Recipe:
2 TBSP Salt
2 TBSP Brown Sugar
1 TBSP Black pepper
1 TBSP Garlic Powder
1 TBSP Dried Basil
1 TBSP Paprika
1 TBSP Dried Tarragon (optional – we didn’t have it on hand)
Mix all together and rub on fish.
Your kids are more adventurous than me…*I* won’t eat fish! Except salmon, so we’ll have to try those rubs on it.
