This one’s for you Stacey, since you had a hard time stopping the munching. I love it, too…it is a super yummy salsa thing.
Recipe:
1/2 cup oil
1/2 cup sugar
1/2 cup vinegar (flavor of your choice)
1 can black-eyed peas, rinsed and drained
1 can black beans, rinsed and drained
1 can white shoepeg corn, rinsed and drained
2-3 Roma tomatoes, seeded and diced
1 red or orange bell pepper, diced
3-4 green onions, chopped
1-2 TBSP fresh Cilantro, chopped
1 tsp Salt
In large bowl, combine all ingredients and mix to thoroughly coat. Cover and marinate overnight. You could also add chopped avocadoes and/or some tabasco sauce for heat. Serve with tortilla chips.
