This one I got off the internet for a local deli type restaurant. It is a fabulous salad that I love to pieces. Now, I have no idea where to get “champagne vinegar”, so I would go with just regular white vinegar or even red wine vinegar would be good.
Turkey Dried-Cherry Pasta Salad
Recipe from Angela Flynn of the D’Amico & Sons organization.
POPPY-SEED DRESSING:
2 cups mayonnaise
2 tablespoons Dijon mustard
1/4 cup confectioners’ sugar
2 tablespoons champagne vinegar
2 tablespoons water
1/2 teaspoon finely ground black pepper
1/2 teaspoon poppy seeds
2 teaspoons kosher salt
SALAD
1 pound rotelle pasta
1 tablespoon olive oil
8 ounces diced cooked turkey breast
3 ounces dried cherries
1/2 cup medium diced yellow onions
1/2 cup medium diced celery
1/2 cup toasted whole almonds
To make dressing: Mix together completely mayonnaise, Dijon mustard, confectioners’ sugar, champagne vinegar, water, black pepper, poppy seeds and kosher salt.
To make salad: Cook pasta past al dente. Drain. Toss in olive oil. Cool completely. In large bowl, combine pasta, turkey, cherries, onions and 1/4 cup almonds. Mix in dressing to desired consistency. Taste for salt and adjust as necessary. Transfer to a serving dish. Top with remaining almonds. Makes 4 to 6 servings.
