This may sound familiar…ever been to the Olive Garden?? Brian and I LOVE this soup, and I figured out how to make it after eating there one day. I found a different version on the web afterwards and modified my original for it.
I made it again this week, and realized I probably haven’t shared it in my blog yet. I will bake a loaf of quick bread (I love the Beer Bread from Tastefully Simple, yummy!) to go along with this soup. Seriously, it is soooo yummy. The kids even ate it…sorta. They didn’t scream “I don’t like this!” while we spooned it into their gaping maws, how’s that?
Recipe
1 lb hot sausage (mild, if making this so the kids will eat it)
1 slice bacon, diced (I usually don’t put this in but it would add flavor)
2-3 minced garlic cloves
¾ cup sliced onions
1 quart chicken stock (this would be a box of Swanson’s chicken broth)
3 medium potatoes, sliced
2 cups cavallo greens or kale (thick leafy green)
¾ cup heavy whipping cream
a few dashes of Tobasco sauce, to taste
1 tsp Pepper
1 tsp Salt
1 tsp Italian seasonings
Brown sausage with onions, bacon and garlic. Add chicken stock, potatoes, tobasco (I would omit for kids), and seasonings. Bring to simmer for 15-20 minutes. Add greens and whipping cream and simmer for 5 minutes more and serve.
Oh that sounds SO good….
I LOVE that soup from Olive Garden, it is my absolute favorite. I made it for my family once, turned out pretty good. I should make it again, you have me drooling.

Ok, I made this tonight and YUM! I am not sure if my kids are diggin’ it just yet lol but I am! It hit the pregnant spot for sure. It really does have a great flavor, you don’t even need the bacon (I omitted that) because the flavor is so good on it’s own.
