I just thought I put out a few tips for veggies I like to grill.  I am the queen of the grill in our house.  The only time the hubby grills is at parties when I am already busy with everything else.  I like to grill.  Most of the time it is pretty simple to do and not as messy as the kitchen. We have a natural gas grill with a hook up to the house.  I was so excited when I saw that upon buying the house.  We got a nice Weber stainless steel grill capable of the hookup and I’ve been a happy camper ever since. 

Summer Veggies I like to grill:

Sweet corn – either shucked or with the husks
Sweet Red, Orange, or Yellow peppers  (my personal favorite!)
Asparagus
Summer squash

These are just a few that you can try.  Cut up and clean your veggies.  I keep the peppers in large pieces.  All I do is sprinkle with some olive oil, fresh cracked pepper and sea salt and throw on the grill.  Easy peasy.  Just grill until they are blackened a bit, but not too mooshy.  I like them to be a little crisp.  I usually throw a few sprinkles of sea salt over the top again after cooking.

I have also done aluminum packets with cubed potatoes, onions and mushrooms with some butter, salt and pepper.  These usually take about 20 minutes on the grill.  Of course there are also the ever-popular kabobs, with cherry tomatoes, onions, peppers and mushrooms.  You can’t go wrong with those!

FYI – the kids LOVE to eat corn on the cob off the grill.  One of the few veggies they will eat for us.

Here’s a summer salad I made this week with grilled veggies.  It’s a bit like my cowboy caviar recipe.  I served it with grilled chicken that had been marinaded half the day in Lawry’s baja chipotle marinade (my favorite!).

1 can black beans, rinsed
1 can shoepeg corn, rinsed
2 tsp cilantro, chopped
juice of 1 lime
1 tbsp sugar
1-2 tbsp white vinegar
1 grilled red pepper, chopped up after grilling
1/2 large onion grilled, chopped up after grilling
Salt and pepper to taste

Mix everything together and serve.  Easy!
