I said I was going to be giving out recipes, right? That will be one of my New Year’s Resolutions, since hopefully it will make me try new things, too.
This recipe was given to me by my friend, Sandy. Love it! Even those that don’t like guacamole…love it! So, you must try it and make sure you get the Lime Tostitos. They are lasting, life-long companions for this yummy snack.
Recipe:
2 Ripe Avocados (To buy avocados, they will give a little when you push on them. If it leaves an indentation…they are way too ripe so don’t use those.)
1 seeded tomato, diced (To seed it just cut it in half and moosh it (technical cooking term) to get out the seeds and juices)
Juice of 1 lime (A good trick is to apply pressure and roll it back and forth on the counter before you cut it in half and juice it. This gets the juices flowing and makes it easier to juice).
Salt to taste
All you do is just take the avocados out of their peels, put in the tomatoes, juice and salt and I use a potato masher to get it all combined. Then it’s ready. Easiest appetizer I ever made!
I could eat the whole bowl of this, it is that yummy. At least the fat is good fat, right? Well, besides the chips! 😀
