I got this idea from my close personal friend, Rachael Ray.  Well, maybe not all that close…maybe not a friend…but she really likes people like me that have a ton of her recipe books.  Her 30 minute meal concepts work fabulous for working moms like myself.

So, this recipe is just a basic meatloaf recipe, but you bake it in muffin tins!  Eureka, what an idea!  Everyone gets the yummy crunchyness that used to be only reserved for the heels of loaf with the added bonus that it takes less time to cook. 

Recipe:

1 lb hamburger
1 pkg stuffing (I like the Stove Top Mushroom & Onion stuffing but anything really works)
1 egg
Spices to taste (I like Montreal Steak Seasoning, it seems to have everything in it)
1/2 cup ketchup

Prepare oven and preheat at 400 degrees.  Moosh all the ingredients together in a bowl and put in muffin tins.  Add a thin layer of ketchup on top of each meatloaf muffin.  Cook for about 30 minutes.  If the muffins are packed tight, then you may need to cook for 40 minutes.

Easy and yummy! 😀
