This one will have a couple of recipes so you have the whole meal. Now, mexican is kinda hard with kids if it’s too spicy. My kids are pretty picky on that, so I make mine pretty mild and then you can have some spicy salsa for the adults to add when you are loading up your tortillas. My kids also do not like to eat meat, so what I do is just make a soft taco for them with just cheese, sour cream and a little bit of meat that they hopefully will eat. Depending on the day, my kids either love this chicken or won’t eat it. It has a bit of sweetness to it with the honey so that is sometimes a winner for kids.
Fajitas:
2 large chicken breasts, cut into slices
1 Red pepper, sliced
1/2 onion, sliced
2-3 TBSP Honey
1/3 cup lime juice
Soft flour tortillas
Extras: sour cream, shredded cheese, salsa
Get a skillet large enough to cook the chicken mostly flat. Add a little olive oil to the heated skillet and start sauteing the chicken. Mix the honey and lime juice and pour over the chicken. Add the onions and red pepper when the chicken is about 3/4 done and saute everything together. Once it is mostly done turn up the heat a bit and get the chicken and veggies carmelizing with the sauce. When its done, serve in the flour tortillas with sour cream, shredded cheese and salsa. I have adjusted the amount of lime juice and honey to what I like, since I’m more of a sour puss. Sometimes if the honey/lime sauce seems to boil away too soon I will put more in at the end for the carmelizing.
Mexican Rice:
3 cups water
1 1/2 cups rice
pad of butter
little salt
1 small can of tomato sauce
1/2 cup salsa
1 tsp cumin
1 tsp Worstchestshire sauce
Cilantro, chopped (optional)
Extras: sour cream, shredded cheese, salsa
Do you have a rice cooker? Get one. I have two of them and LOVE them. My latest gadget is a rice cooker from Pampered Chef that I can use for the microwave, and its about 20 minutes in the cooker and minimal mess. It’s my new favorite toy. So, make your rice up (water, rice, butter and salt) and when its done mix in all the remaining ingredients. Done…wasn’t that easy? My kids are quite fond of spanish rice mixed with sour cream and shredded cheese. If your kids are super picky about spiciness, choose a mild salsa or just omit it.
Oh, and my favorite rice is basmati rice but any rice will do. Although brown rice is the healthiest, my kids don’t like it because its too chewy. Hopefully in a few years I can switch back to it, but for now I go with the rice they will eat.
We have a favorite way to do chicken in the crock-pot. Since I work, this is a GREAT, easy way to have mexican with little effort on my part.
Frozen or thawed chicken breasts (the actual recipe calls for 6, but I use however many people are eating, plus one if a bunch of guys are eating over that night)
1 can diced tomatoes
1/2 packet taco seasoning (again, base it on your family’s likes/dislikes)
Cook on low for 6-7 hours. Chicken will shred nicely and mix with the tomatoes for a wonderful taco, nacho, enchilda, salad, whatever-you-might-like-that’s-mexican-dish.

Thanks for adding that! I have done the chicken in the crockpot before, too, and it works wonderfully. I’ve also put salsa in there, as well. Another wonderful time saver for us busy moms!
