Now, I know what your thinking…looks like a lot ingredients and I don’t have all of them.  But!  But, you will love this so much it will be worth it…believe me, I promise!  What could be better (especially from a child’s perspective) than peanut butter and noodles??  Tell me…what could be better?

Recipe:

4 cloves garlic, minced
1 TBSP onion powder
2 TBSP vegetable oil
3-5 drops dark sesame oil
1 TBSP bottled fresh ginger (usually in the produce section)
1 TBSP red wine vinegar
1/4 cup firmly packed brown sugar
1/2 cup smooth peanut butter
1/4 cup ketchup
1/4 soy sauce
juice of 1/2 lime
1 tsp ground turmeric
Optional:
1/4 to 1 tsp crushed red pepper
1 chicken breast, sliced and sauteed
1 cup of carrots
1 cup of broccoli
1 pound noodles (rice or just spaghetti)

Boil noodles and cook the veggies in the microwave.  Meanwhile put all of the ingredients before “optional” into a blender or food processor.  Blend until smooth.  Now, if you want heat, but know the kids won’t, just split the sauce add the red pepper to the “adult only” sauce.  If you want chicken, saute it while the noodles boil.  Throw everything together and you are done!  I like to squeeze some lime over mine, but I am a sourpuss so that is optional, too.  Oh, and you can put some chopped peanuts on top, too.  Doesn’t it look yummy?
