I found today’s recipe on Jen’s blog right here.  It looked so darn yummy I just HAD to try it!  Plus, it has roasted chicken in it, and if you read this recipe you know how much I love that.  I’m lucky enough to have a Boston Market on the way home from work, so I don’t even need to get out the car to get the chicken (but it is more expensive that way)! 

I made two new recipes this week, with the other being a pork roast in the crockpot with sauerkraut.  While this was quite yummy, it also causes the “toots” and some people don’t like that.  My children however like to point out when they (and those around them *cough* *cough*) have the vapors.  It was probably their most favorite part about the dish. 🙂 

I have stayed away from curry for years, just because I was never a big fan of it growing up.  My mom is a good cook, but was never my favorite dish.  This is different from the dish she tried to get me to eat for so many years (I used a lot of rice and just a smidgen of the sauce to get by!), and I found it quite tasty.

Recipe:

1 1/2 tbsp olive oil
1 sm yellow onion, thinly sliced
2 tsp curry powder
1/2 c plain yogurt
3/4 cup heavy cream
1/2 tsp Kosher (or regular) salt 
1/4 tsp black pepper
1 14.5-oz can diced tomatoes, drained and rinsed (optional)
1 rotisserie chicken
1/4 c fresh cilantro leaves, roughly chopped

2 c cooked couscous (I cook couscous in chicken broth with TBSP or so of lemon juice thrown in.  In case you have never cooked this before, let me tell ya, this is the easiest carb you will ever make!)

Cook onion in oil for 7 minutes. Add curry powder, stir, and cook for another minute. Add yogurt and cream and simmer gently for 3 minutes. Stir in salt, pepper, tomatoes, and cooked chicken. Warm through and top over the couscous (or rice if you prefer).  Enjoy!

When I made this last night I didn’t rinse the tomatoes and they added a bit too much flavor, so I think if you rinsed the diced tomatoes it would be much better.  They seemed to overpower the curry flavor as it was.  I did take a picture of it last night, but it is still on my camera, so I will try to add it later.
