As in the Olive Garden.  As in, it was so yummy that I had to figure out how to make this soup!  This is an oldie but a goodie.  Better for cold winter days, and since it has snowed this week here…apparantly it is still winter!  Don’t let the fact that the calendar said it was spring fool ya…it SNOWED.

Recipe

¾ cup sliced onions
1 slice bacon, diced (I usually don’t put this in but it would add flavor)
2-3 minced garlic cloves
1 quart chicken stock (this would be a box of Swanson’s chicken broth)
2 medium potatoes, sliced
2 cups cavallo greens or kale (thick leafy green – I can usually find Kale)
1 lb hot or mild sausage
¾ cup heavy whipping cream
a few dashes of Tobasco sauce, to taste
1 tsp Pepper
1 tsp Salt
1 tsp Italian seasonings
Brown sausage with onions, bacon and garlic.  Add chicken stock, potatoes, tobasco, and seasonings.  Bring to simmer for 15 minutes.  Add greens and whipping cream and simmer for 5 minutes more and serve.  This is really yummy with some garlic bread or bisquits.  Enjoy!
