The kids ate it without much whining at all. Need I say more?
I found this recipe on an abandoned blog (how I got there, I do not know), and it sounded pretty good. I made it just a little differently, so here is my take on it. I had all the ingredients to make it in the freezer and cupboard, so this is a really nice, quick weeknight meal.
Recipe:
1 T. Olive oil
1 sm. onion, chopped
2-3 minced garlic cloves
1 Tbsp. Curry powder
1 lb ground sausage
3/4 cup chicken broth
1 (16 oz.) can black beans drained and rinsed
salt and pepper to taste (I didn’t add any because the sausage I used had enough salt content and spiciness)
1 cup uncooked Rice
Cook up your rice. Meanwhile, saute onion and garlic in oil with the curry powder. Add sausage. Cook about 5-8 minutes until pretty much done. Add broth and beans. Cook 4-5 minutes longer. When rice is done, mix in with the sausage/bean mixture. Enjoy!

I have made something very similar to this. Not that I would ever be able to remember the recipe right now. But it is something my household would eat. 🙂
