Here we are again…halibut. Yes, I have a lot in my freezer, which is why you won’t see any other fish besides halibut and salmon on this blog. I still have lots. But that’s okay, because I can make yummy things like this with it!
After Brian came home from his foray to Austin, TX, I figured he needed some good home cooked vittles. I made this halibut dish, steamed beans in browned butter (from the summer’s CSA) and a nice hot loaf of french bread. I just wanted him to remember why he should want to come home. 😉
Recipe:
1 lb halibut
4 oz cream cheese
1/3 cup sour cream
2/3 cup pesto (I think, it was one of my pesto portions I made and froze in a large muffin tin)
1/4 cup parmesan
Spray the bottom of a glass baking dish with oil/Pam. Place halibut in the dish. Mix the remaining ingredients together and slather over the halibut. I heated the cream cheese up a bit in the microwave to soften it up before mixing everything together.
Cover with foil and bake for 35 minutes at 350 degrees. Enjoy the goodness.
Yes, there is a piece of halibut under all that creamy-pesto-y goodness.
I would hurry home for that too….

Actually, there’s a pot roast cooking in the crockpot right this moment and it smells like I haven’t managed to destroy it. So he might not be complaining as badly in an hour.

Bookmarking this one. My hubs is lactose intollerant but might even have a hard time resisting it. Looks sooo good.
