This was a quick Saturday night dinner when I just was out of ideas.  It was quick in the way that I had the polenta squares and pesto in the freezer from big batches that I had made previously.  The kids really liked the “bread”. 😉

My freezer is my friend when it comes to homemade meals in short timeframes.  It is nice that I have stuff on hand that will produce healthy-ish meals for the family.  Doing the preparation in one fell swoop instead of everytime I go to make a meal means I am more likely to cook than order something from a restaurant.  We rarely eat out in our house.  Why would we?  I can make restaurant quality meals and Brian can pair it with a great wine.  Win, win!

How to make polenta

Basically, mix up the pesto round with a big can of crushed tomatoes and a tablespoon of honey.  Reduce it down so it is nice and thick – about 15 minutes.  Meanwhile grill the polenta on a stovetop griddle OR broil in the oven.  I brushed the polenta with a mixture of balsamic vinegar, olive oil, and salt and pepper.
