This meal is based off this recipe.  Instead of what they did, I used a pork roast.  Basically all I did was throw a pork roast in the crockpot, emptied the jar of peppers over it, added some pork seasonings and cooked it on low all day.  Then I did the sandwiches with crusty bread and provolone, melted the cheese over the meat in the oven, and we used the juice from the crockpot as an au jus.   Yum.  I didn’t think the kids would appreciate the peppers, so I after shredded the pork and before I added the peppers back in I made their sandwiches.

The side is just a simple salad: 2 cans of rinsed black beans, 1 cup of corn, 2 juiced limes and some cumin.  Afterwards, I used the salad as filling for a tortilla with some melted cheese, salsa and sour cream.  Yummy!
