This is another recipe that I acquired from a friend of mine about a year and a half ago. Look away if you are on a diet…this is not the recipe for you! It is, however, a great recipe for those of us that crave fattening foods. Now, I wonder why I need to lose 10 lbs??? Hmmmm….
Recipe:
1 lb chicken (3 chicken breasts), cut up in small pieces
1/2 onion, minced
2 cloves garlic, minced.
1 8oz pkg cream cheese
1 can green chiles
1 can green enchilada sauce
1 pkg shredded cheese
Tortillas
Heat oven to 400 degrees.
In a frying pan, saute the chicken breasts with a little olive oil, garlic and onion. When done, melt in the cream cheese. Now with little ones, I would spoon this mixture into a few reserved tortillas and roll up. Set in rectangular casserole dish. Then, add the chiles into the chicken mixture for the adult enchiladas. Once all the tortillas are rolled up in the dish, put the green enchilada sauce over the tortillas, sparing the kid ones. Cover everything with the cheese. Bake for 30 minutes and serve.
That is almost exactly like my enchilad recipe. But the girls won’t eat it.
You get an overnight GNO?! I’m jealous. Are you staying at a hotel with a spa? How will the hubby, I mean, kiddos do? My hubby stresses out every time.
