With a little prep the night before, while you are making dinner, you can get most of the work done and make this a quick weeknight meal. You can do it all on the stovetop at once, but I modified the orginal recipe to make it with a crockpot.

1 pound ground beef
2-3 cloves garlic, minced
1 chopped onion
3/4 carrots, diced
3/4 celery stalks, diced
4 cups diced peeled potatoes (1-3/4 pounds)
3 cups chicken broth
4 tablespoons butter, divided
1/4 cup all-purpose flour
1-1/2 cups milk
3 cups shredded cheese (white cheddar is good)
2 teaspoons dried basil
1 teaspoon dried parsley flakes
3/4 teaspoon salt
1/2 teaspoon pepper
1/4 cup sour cream

Brown beef with the onions and garlic. Add the beef mixture, carrots, celery, broth, and potatoes to a large crock pot. Set on low for 8-10 hours. When you get home from work, in a small saucepan, melt remaining butter. Add flour; cook and stir for 3-5 minutes or until bubbly. Combine milk with 1 cup of broth from the crockpot and add into butter/flour mixture. Add milk mixture slowly, mixing well, then the cheese and spices. When all melted blend in sour cream and add this to the crockpot.  All done!

This is definitely comfort food.  A yummy, hearty soup!
