I thought I would share what I made on Christmas Eve. I didn’t use any recipes really, since it was a bit of a fly-by-the-seat-of-my-pants meal. What I was originally going to make didn’t pan out due to not having the ingredients I thought was in the pantry and/or freezer.
Pork Loin stuffed with goat cheese and craisons –
I orginally wanted to get the little pork loins, but Costco was all sold out of those. I got a huge pork loin that was packaged marinated in garlic and onion. I fileted the loin by making one cut through the bottom third to about an inch from the edge. Then on the bigger half, I fileted that again so it was a bit of a tri-fold. Then I crumbled a large log of goat cheese and emptied a half bag of craisons across the cheese, spreading evenly. Then I wrapped it up and tied it with butcher’s twine. I took my big baking pan and heat olive oil in that and seared both sides of the loin. Then I put about a cup of water in the pan, covered it in aluminum foil and put it in the oven at 315 degrees F for about 3 hours.
Smashed butternut squash and potatoes –
Peel and cube a butternut squash and about 6 medium potatoes. Boil them in water and drain when done. Mash them up, add 1/2 cup sour cream, 1/4 cup whippping cream, 1/4 cup brown sugar, sea salt and cracked pepper to taste. All done.
Mixed veggies in a cream sauce –
Easy, just throw a package of cream cheese, a 1/2 stick of butter, 2 packages of mixed veggies and salt and pepper to taste into a crockpot on low for 4 hours, stirring every hour or so.

That all sounds so yummy! The stuffed pork loin sounds so festive, but it really would be pretty easy to do – I’ll have to remember that idea!
