Pinterest is a great place to find and keep recipes.  These are a few recipes that I tried and what I think of them…

Pioneer Woman’s Chicken Tortilla soup

I made it mostly the way she did, but I subsituted Rotel with Lime and Cilantro with the regular Rotel to try to keep the spiciness down for the kids.  It tasted fairly bland when I tried it, so I added another tablespoon of tomato paste and the juices of a lemon and lime.  I also added more cumin, salt and some Arizona Seasoning from Penzey’s.  My soup ended up boiling near the end and broke up the corn tortillas a bit, so watch to make sure yours doesn’t do that.  The kids ate it up pretty good, so it’s a winner!

Mongolian Beef

Again, the recipe was pretty good, but I didn’t add in the red pepper flakes due to the kids tender palates.  I also substituted carrots and regular sweet onions for the stir fried veggies because it was what I had on hand.  Again, the kids ate it up, so another winner!

Philly Sloppy Joes

I didn’t have any steak sauce on hand, so I made my own.  I also put a lot more in there than they wanted (about 1/2 cup) and I also just used regular provolone cheese instead of the cheese sauce.  I served it on croissants that I melted the cheese on under the broiler.  It was super yummy (and the kids ate it up)!

Feta, Spinach, and Brown Rice Casserole

This turned out really well, and was tasty.  It is a great veggie recipe for Lent.

Spaghetti with Fried Eggs and Pangritata

This recipe is for one, so I increased all the ingredients.  I used 5 eggs on it and that seemed to be enough.  This was a quick easy non-meat meal for Ash Wednesday.  I used Italian style breadcrumbs and dried rosemary, so I just used what I had.  Make sure you don’t leave the bread crumbs while browning them, as they when they are done it happens really fast and you could easily burn them.  It was good.

Healthy Crock Pot Stuffed Peppers 

This recipe uses cauliflower instead of rice, so I thought I would give it a shot.  I used beef hamburger instead of pork, and I didn’t add water over the top.  I put two small cans of tomato sauce over the top for more flavor.  I think without the extra tomato sauce it would be a bit bland.  It tasted pretty good this way.  I just gave the kids the meat and veggies along the sides instead of the peppers.  Kai asked for an extra serving, so it was a winner. 🙂
