No, we’re not back yet, silly!  We are still enjoying our vacation, and today is our 10th anniversary.  We’ll be enjoying the day in San Francisco, and are coming home tomorrow. 

I just wanted to share this recipe so I pre-posted it for the food Friday.  I made it a few weekends back as a dessert to bring to our friends’ house for dinner with them.  It is easy and yummy!

Recipe: 

1 pkg french vanilla pudding (plus the milk to make it with)
1 can sweetened condensed milk (I usually get the light version – yeah, I know I’m just kidding myself)
1 pint fresh whipped cream **
1 pkg cream cheese (again…the light version)
3 bags Milano cookies

Mix the milk and pudding mix to make the pudding.  In a separate bowl, mix the sweetened condensed milk and softened cream cheese.  Add the pudding and fold in the whipped cream.  In a nice decorative bowl, layer crushed cookies with the pudding mix.  After the final layer of pudding put a decorative layer of whole cookies on the top.  Refrigerate and serve.

**I know you are probably thinking that this must be difficult to do.  It is NOT!  It will take you just about as much time to make fresh whipped cream as it would to go find that container of Cool Whip in the grocery store and plop it in the grocery cart.  It also tastes much better.  Does this recipe look like it needs added sugar??  All you have to do is put the pint of cream in a bowl, get out your blender or hand mixer (I use my little Braun hand mixer with the whip attachment) and just whip the cream.  It takes about 2-4 minutes to get nice peaks and then your done.  Easy peasy!
