Oooh, fancy name…must be tough, right?  Wrong!  This is another yummy salad that I made just last week for guests and got some rave reviews and a “Can I have that recipe??”.  Yum!

Recipe:

1 small red onion, finely diced
1 TBSP Salt
1 TBSP Sugar
4 lbs ripe tomatoes (about 5)
1 small loaf of peasant bread (I used Panera’s three cheese bread)
Olive oil
1 small cucumber, seeded and diced (optional)
1 red or yellow bell pepper, seeded and diced
2 garlic cloves, peeled and sliced/minced
1/2 cup grated Pecorino Romano cheese OR 1 ball fresh mozzarella, diced
1/2 cup Basil, julienned (optional)
1/2 cup Extra virgin olive oil
3 TBSP Red wine vinegar
Salt and pepper to taste

Preheat oven to 350 degrees.  Take bread cubes and toss with olive oil to coat.  Bake in oven for 15-20 minutes until lightly golden brown.  Meanwhile combine onion, sugar and salt in small bowl.  Core, seed (squish) the tomatoes and dice.  Combine all the remaining ingredients and put in the refrigerator.  Right before serving toss with the bread crumbs.  Add salt and pepper to taste, serve.
