What is gnocchi?  Well, it is a potato-based pasta that will stick to your ribs.  Basically, it is pasta made out of mashed potatoes and you can usually find it in the freezer section next to the ravioli.  This would also be one of those times that you pull the rest of the meat sauce that you made here out of the freezer.  You just throw everything together and put it in the oven.  It’s pretty easy to whip up and tastes fantastic.  It is an often requested dish by guests that come to our house.

 Recipe:

4 cups meat sauce
1 package gnocchi – prepared (boiled)
1 package button mushrooms, cleaned and quartered
1 can quartered artichokes, rinsed
handful kalamata olives, pitted
1 pkg feta cheese

Boil the gnocchi…or not.  I’ve put it together before without boiling it first if the sauce has enough moisture. 

Meanwhile get the rest of the ingredients prepared.  Put tin foil in a rectangular glass baking dish – enough to be able to seal it all together when everything is inside (I use the extra long tin foil).  Layer the mushrooms, artichokes, olives and feta.  Mix the sauce with the gnocchi and pour over.  Seal the tin foil together and put in a 400 degree oven for about 30 minutes (a bit more if you didn’t boil the gnocchi).  I have added more artichokes and feta to the recipe depending on how much I have on hand…I also really like feta!
