Costco had a sale on pork last week, so I picked up some tenderloins and chops.  They have these small pork tenderloins in a pack of two, with two to a bag.  I can get 4 dinners out of that, so it is a great deal.  I find that pork lacks a bit in flavor, though, so it really needs some OOMPH to lift it up.  This was my solution, and I made this pork tenderloin on the grill.  Wow, was it good.  I finally got my grill cleaned off and ready to rock n’ roll for the summer.  Grilling just doesn’t happen in the wintertime here.  I made it with grilled corn on the cob and caprese salad.  Can you say YUM?

Recipe:

1 small pork tenderloin
Italian seasoning
1/2 package proscuitto
6-8 slices salami
1 small package goat cheese
1/4 cup craisons
olive oil
sea salt
pepper

Filet the tenderloin lengthwise.  To do this first cut about 1/3 of the way in to about an inch for the edge, then filet the next 1/3 the same way.  Pound it out flat with a meat mallet.  Liberally season the inside with Italian Seasonings.  Layer the proscuitto, the salami then goat cheese and craisons.  Use butcher twine to tie it closed and rub the exterior with olive oil.  Season with more Italian Seasonings, salt and pepper.  On your pre-heated grill have it on high enough heat to sear it on all sides.  Then turn down the heat and cook for about 20 minutes, or until the meat thermometer comes out at 145 degrees.  Allow to rest for about 5 minutes before cutting.
