The other day I had to serve dessert for my bunco ladies when I hosted at our house.  In my cost saving glory, I was trying to figure out what to make that would be #1 QUICK (last minute, yet again) and #2 CHEAP.  I decided on buying $1.10 box of brownies and $2.70 quart of whipping cream, of which I only used about 1/2.

Step 1.  Mix up brownies
Step 2.  Put mix into large muffin tins that have been greased with butter and covered in cocoa powder.
Step 3.  Bake
Step 4.  Put 2 cups of whipping cream in bowl and mix up until peaks form (takes a few minutes).  Cover and put in fridge.
Step 5.  Take muffin tins out of oven and use a knife to losen sides
Step 6.  Serve warm brownie muffins with whipped cream.  If they aren’t very warm, pop then in the microwave for a minute.

Easy, cheap and yummy!  Make sure to put it in a pretty bowl, so they don’t think you are being TOTALLY cheap.  Add a little warm chocolate sauce, too, just to push it over the top.

See…don’t these look so glamourous??  Don’t I have such a helpful food presenter?  Wait, I think he is trying to steal it!  Geesh. 😉
