I asked my sister-in-law for her recipe for this yummy, yummy morning treat.  She’s made it for us a few times when we have stayed overnight at their place when visiting.  It takes awhile to cook, but it is so worth it.  The perfect breakfast for overnight guests, with minimal morning prep. 

Recipe:

12 slices day-old white bread or french bread, crusts removed
2 packages (8oz) cream cheese
1 cup fresh or frozen blueberries
12 eggs
2 cups milk
1/3 cup maple syrup or honey

Cut bread into 1 inch cubes; place half in a greased 9×13 baking pan. Cut cream cheese into 1 inch cubes; place over bread. Top with blueberries and remaining bread cubes. In a large bowl, beat eggs. Add milk and syrup; mix well. Pour over bread mixture. Cover and chill for 8 hours or overnight. Remove from refrigerator 30 minutes before baking. Cover; bake at 350° for 30 minutes. Uncover; bake 25-30 minutes longer or until center is set. (I have had to cook this longer; seems to depend on how much the bread soaks up the egg mixture.)

Sauce
1 cup sugar
2 Tbsp cornstarch
1 cup water
1 cup fresh or frozen blueberries
1 Tbsp butter

In a saucepan, combine sugar, cornstarch and water. Cook until sugar is dissolved and mixture is hot and bubbly. Add blueberries; cook 1-2 minutes longer. Remove from heat; add butter. Stir and serve over French toast bake.
