If you don’t have a crockpot, then you need to have one. They are so nice to have when you just want to throw a meal together and leave it to cook itself. There isn’t much preparation for this one, but sooooo yummy in the end! Definitely a winter comfort food. When I make this on a workday, I just prepare everything the night before, so I just put the crockpot in the refrigerator overnight and plunk it into the heater in the morning before I leave for work. Easy!
Recipe:
2-4 large chicken breasts (I use 2 and that seems to be more than enough)
1 can cream of chicken soup
1 box of chicken broth
4 peeled and diced carrots
4 Tbsp butter
2 tsps Poultry Seasoning
Salt and Pepper to taste
2 cans Pilsbury biscuits or batch of Bisquick bisquits
Put chicken in the bottom of the crockpot and add the carrots on top. Mix the soup, broth and seasonings together and pour over. Top with butter. Cook on high for 4 hours or low for 8 hours. I will put this on at 7 am and come home at 5:30 and it isn’t overdone. About an hour-45 minutes before its done, take the chicken out and shred it. Place it back into the pot and put the quartered bisquits or rounded TBSPs of the Bisquick bisquits on top of the soup. Turn up on high and cover. It should take at least a 1/2 hour for the bisquits to be done. Enjoy!
