Sorry no picture of the yumminess today. I have made this side dish several times in the past few weeks, but have forgotten to take pics. Hopefully I will remember and add a picture later. This is a super easy and yummy way to make potatoes on the grill.
Recipe:
1lb – 1.5lbs potatoes, sliced thin (new potatoes or fingerlings taste best…just scrub them and no peeling necessary!)
1-2 small summer squash, sliced thin (don’t need to peel, just scrub them up)
1/2 onion, minced
Olive oil
Salt and pepper to taste
herbs from the garden, optional (thyme and parsley tastes good in this)
A few dabs of butter
First, get all your veggies cut up and mix in a bowl with olive oil and the herbs, salt and pepper. I use just enough olive oil to wet them a bit. If you don’t have summer squash, this is fine with just potatoes. You can also add mushrooms, green/red/yellow/orange peppers…even cauliflower! Now, get a big piece of aluminum foil. Spray with something like Pam, so the veggies don’t stick to it. Place the veggies in the center, with a few dabs of butter sprinkled about, and cover with another piece of aluminum foil. Roll up the edges really well…we don’t want it to open and leak out!
Once your grill is all heated up, place on the grill. It will usually puff up as the veggies steam in there. Cook for 10-15 minutes and then CAREFULLY turn it over. I have several times using metal tongs ripped it open. When you turn it they will go to one end, so just jiggle it to get them to flatten out again. Cook for another 10-15 minutes.
These go great with burgers or steaks on the grill. 🙂

Butter!
We’ve done these for years…only not as a side dish. We call them foil dinners and use olive oil and/or butter and make them nice and big. Turning them over is much easier if you use a large grill spatula for the bottom and an oven mitt on your hand to stabilize the top. We’ve also added pieces of ground beef (same size as your veggies), and cream of mushroom soup makes a nice gravy. There are a lot of yummy Pampered Chef spices (my wife is a Pampered Chef consultant) that work well, too.

This is my favorite way to cook veggies. So easy and yummy. We usually include carrots and green beans with the potatoes. Sweet potatoes are really good this way too.
Yes! We love these too. Although, usually this is what we take camping with us and just thow the packets over the fire.
Mmmmm just moved into our new house and one of the first things Daryl needs to do (hopefully this evening) is getting the grill going. Can’t wait to try this…sounds soooo yummy!
