This is a recipe that the kids loved.  It also tastes good to adults and is halfway healthy.  Sure winner!!  I got the recipe from recipezaar.com, but haven’t been able to find it so I can link it to give the proper credit.  So…whomever did this – you are wonderful!

Apart from how I prepare it below, you can also do it in a loaf pan or as meatballs.  If you want to make a big batch of sauce with the meatballs, maybe add a bit of wasabi to the sauce, throw in the cooked meatballs in a crockpot on low, and you have a yummy appetizer for a party.  Of course, if most of your guests come to your party after having already eaten, then you may have a bit of them leftover for the next day.  Despite their awesomeness.  At least your kids will be happy.

Recipe:

2 lbs ground turkey (I use italian flavored)
1 egg
1 cup breadcrumbs
3/4 cup milk
1/3 cup soy sauce
1 can water chesnuts, chopped fine
1 small onion, or 5 scallions, chopped fine
2-3 cloves garlic, chopped fine or 1 TBSP roasted garlic*

Sauce:
2/3 cup ketchup
2/3 cup honey
5 TBSP soy sauce
2-3 cloves garlic, chopped fine or 1 TBSP roasted garlic*

Okay, mix everything up together for the meatloaf.  Put into the big muffin tins almost to the top.  Don’t press it down too much or compact it.  Cook in an oven at 375 degrees for 45 minutes.  About 10 minutes before they are done, heat up the sauce on low heat, so it is ready to spoon over the meatloaf muffins when you plate them up.  For the kids I just allow them to dip it at their leisure.  I served this with rice and carrots.

*I think I have blogged about roasting garlic in batches before.  Just cut off the tops, sprinkle with olive oil and sea salt, then cover with aluminum foil and roast in the oven at 375 degrees for an hour.  When done, pop them out and puree them or squish through a metal sieve.  Then I put them in an ice cube tray to freeze in 1 TBSP portions.  When frozen, I pop them out into a freezer bag and to use whenever I need them.  I did this in the Fall and I still have a little bit left, so it can last quite awhile.

***This is a big batch, so it creates leftovers for a good day for our family.  Feel free to halve the recipe to make a smaller batch.
