In my quest to make you gain weight simply by viewing my blog…I have another recipe for you.  This comes via my father, though I made it less futsy and more throw-on-the-grill-during-the-week.   My dad makes it by taking a big fillet of salmon, pounding it out and rolling this filling up in it.  Then he puts oranges on the outside and grills it in an aluminum foil package.  I think he smoked it once, too.  Either way…good stuff.

Recipe:

1.5 lb piece of salmon, skinned and de-boned
1/2 pkg cream cheese (4 oz)
small can crab meat, drained
1/2 cup sour cream
1/3 cup Parmesan cheese
1 tsp dill weed
1/2 lemon or orange

Get the grill going, or an oven at 350 degrees.  If you are using a grill get a piece of aluminum foil, and if you are using the oven, a glass baking dish.  Slice up the lemon/orange and place in the bottom.  Place the salmon over the lemon/orange slices.  Mix up the remaining ingredients and spread over the top.  Seal up with aluminum foil and bake for 15-20 minutes.

Enjoy the goodness.

I served this with carrots and bread baked above the salmon on the grill.  Then I told the kids how lucky they were that they got to eat this.  Whereby they asked me when they could have hamburgers. 

One day children you will realize that you had it good growing up…mark my words!

As I am attempting to control my weight, I just ate a small piece of this.  Everything in moderation.  If I can’t eat good food…what is the point of cooking??
