Tacos are the kids’ second favorite meal next to Kraft macaroni and cheese. Usually I do the ground beef tacos…simple and easy. This is, however, my favorite way to make them. It is my remake from ChiChi’s fajitas, which I LOVED the flavor. I remember forcing my non-Mexican-food-loving amigo to go there for dinner just so I could have this wonderful dish. Eventually, I brought her over to the dark side of ethnic food eating and she hasn’t looked back.
Recipe:
2 large chicken breasts, cut into thin strips
2 limes, juiced
2 TBSP honey
1 tsp cumin
olive oil
Heat up the pan and add a little olive oil. Put the chicken strips in the pan and cook up for about 5 minutes on medium heat, getting all sides cooked. Mix the honey and lime juice really well and pour over the chicken. Cover. After about 5 minutes the chicken should be done, so turn up the heat and boil off the juice. Mix the chicken around and it will begin to really carmelize in the pan. After about 4-5 minutes it will be done and the chicken will have a lovely brown coating. Watch to make sure it doesn’t burn. Serve on tortillas with cheese, sour cream and salsa.
I also like to saute up some peppers and onions (that the kids won’t eat) in another pan and make a batch of Spanish rice. If I add enough sour cream and cheese to the spanish rice, they will eat it. 😉 A yummy dinner that the kids will *mostly* eat!

It’s absolutely Jif, well at least when Costco has it in stock. Lord knows we need to buy our peanut butter in bulk. I’m sure Stacy blames me for their habit. I’m not sure where they learned to eat it on a spoon with M&M’s stuck in it though.
