I’m reposting this recipe from a few years ago, since I made it last night and it was still yummy. Plus I finally have a picture for it! Originally, my sister made this with garden fresh goodies and it was wonderful. I modified it a little bit, but not too much.
So, if you have some fresh from the garden produce, or a farmers market nearby, or get this from your CSA, then this is a great recipe for you.
4 tomatoes, seeded and diced
2-3 cucumbers, seeded and diced
1/2 red onion or spring onion, cut in slivers
1 pkg feta cheese, crumbled
Dressing:
1/4 cup olive oil
1/4 cup balsamic vinegar (red wine vinegar would be good, too)
2 TBSP sugar
2 TBSP dijon mustard
1 tsp salt
1/2 tsp pepper
Combine ingredients and chill at least a half hour before serving.

that salad looks ok but I just put some big steaks in to marinade. You guys wanna come over for a barbie????
sounds yummy! I wonder if artichoke hearts would be good with it too? I may have to try when DH is out of town next time since he refuses to eat most veggies!
Yum. Another one I will have to try. I have tons of tomatoes and cucumbers right now so it is perfect!!
