I found a recipe on Food.com for this basic dish, though I added stuff and cooked it differently.   I made this with Pao de Queijo (Quick Brazillian cheese rolls) and cabbage sauteed in aged balsamic vinegar.  The kids didn’t get the gorgonzola topping on their piece of halibut.  I didn’t figure that would be acceptable to their palates.

Recipe:

2-3 halibut filets
salt and pepper to taste
olive oil
1/2 cup gorgonzola
2 TBSP butter, melted
2 TBSP mayonnaise
juice from 1/2 lemon (~ 1 TBSP)
1 TBSP garlic, minced
1/4 tsp garlic salt
1/4 tsp dried basil
1/4 tsp pepper
1 TBSP fresh rosemary, minced up fine

Put olive oil in a skillet (cast iron if possible) and heat up the pan to medium/medium-high heat. Season the halibut with salt and pepper. Add the halibut to the pan and cook for about 4 minutes until halfway cooked through and a little brown. Meanwhile mix together the remaining ingredients. Flip the filets over and turn the heat down a little bit. Add the mixture on top of the filets and cover while it cooks all the way through (another 4 minutes or so – depends on the thickness).

We enjoyed ours with a wonderful bottle of wine.  This scored 96 points and was #17 of Wine Spectators top 100 wines of 2010.
