I cut up about three onions (a bit too many) to make the caramelized onions.  They were potent.  After I was done cutting up the onions (and crying), Anya, who was sitting in the family room reading, said her eyes were hurting her.  Being a good parent, Brian looked up why onions make our eyes sting.  Apparently when cutting into the membrane of the onion, gases are released that when mixed with the tears in your eyes, produces sulfuric acid.

No wonder it hurts.
