This is a really rich casserole using these bad boys from Schwans. Probably not available everywhere, but I bet there is a cheese-filled tatertot in the grocery store somewhere, too.
If not, there should be.
This takes an hour to cook, so not a weeknight dinner. It is very, very good, though, and a good Sunday night meal.
1 lb hamburger
1 pkg sliced mushrooms (optional)
2 cloves minced garlic
Salt and pepper to taste
1/3 cup skim milk
1 cup light sour cream
1 TBSP Worcestershire sauce
1 pkg frozen Cheesy Quik Taters, or similar
1/2 cup crumbled Feta cheese, optional
French Fried Onions, optional
Preheat oven to 400 degrees.
Brown the hamburger with the garlic and seasoning. When it is almost done cooking, add the mushrooms and break them up and cook until they are mostly done. Stir in the milk, worcestershire, sour cream and feta. In a rectangular glass baking dish, spray with Pam and then layer the tatertots on the bottom and then the hamburger mixture. Top with French Fried onions, or not. Tastes good either way. Bake in the oven for an hour. You can top it with some more of the French Fried Onions when serving. Enjoy!
I will try to get a picture next time…it looks like a tator tot casserole, so no big surprise on the looks. 😉
