I have been using a lot of ready made marinades lately, as I just haven’t had the energy to mix them up myself. I really like the McCormick’s Baja Citrus marinade for chicken. I try to marinade it at least 4 hours, but I have done just 30 minutes, too.
Recipe:
1 pkg McCormick Baja Citrus marinade plus ingredients (water, vinegar and olive oil to mix it up)
2-4 boneless skinless chicken breasts (2 is probably enough if they are largish ones)
1 head of lettuce
1 avocado, diced
2/3 can pitted black olives
2-3 tomatoes, diced
4-6 radishes, diced
1 cup shredded cheese (I used queso blanco)
Dressing:
1/2 package Hidden Valley Ranch dressing mix
1 7oz container plain greek yogurt (I used Fage 2%)
2 limes, juiced
1/3 cup taco sauce
After the chicken has been marinaded, grill them up. Set aside when done grilling to cool down a little bit. Then slice the breasts up in relatively thin slices.
Cut/tear the lettuce into eatable sized pieces. Put the tomatoes, olives, avocado and cheese in. Put a little bit of the dressing in the bowl and mix it up to get a light coating on everything. Place the mixture in a pretty serving bowl and then place the sliced chicken over the top. Add a little bit more dressing over the top.
You can, of course, skip the pretty bowl if you want, but it serves it up so nice on the table!
Well my lack of energy goes even further – I have been buying preCOOKED rotisserie chicken from the grocery store and making all kinds of salads with that. 🙂 But your dressing sounds awesome – I’m going to try it!
