Here we have another attempt to get the children to eat veggies.  This has become quite the battle, but I’m not giving up!

I love chicken satay, so I thought I would turn it into a stir fry.  The marinades are pretty quick to throw together, and that is really all that takes any time with this dish.  Using a pre-packaged broccoli slaw keeps the veggie chopping to a minimum.

Satay marinade:
2 tablespoons creamy peanut butter
1/2 cup soy sauce
1/2 cup lemon or lime juice
1 tablespoon brown sugar
2 tablespoons curry powder
2 cloves garlic, chopped
2 skinless, boneless chicken breast halves, sliced thinly

In a mixing bowl, combine peanut butter, soy sauce, lime juice, brown sugar, curry powder and garlic. Place the chicken in the marinade and refrigerate. Let the chicken marinate at least 2 hours, overnight is best…or 30 minutes if you weren’t on the ball enough.

Stir Fry:
Peanut oil
1 pkg Broccoli slaw
2-3 carrots, peeled and julienned
1.5 cups rice

Peanut sauce:
1 tablespoon peanut oil
1 green onion, thinly sliced on the diagonal
1/2-inch piece fresh ginger, minced
1-2 garlic cloves, minced
1 tablespoon brown sugar
1/4 cup creamy peanut butter
1-1/2 tablespoons rice vinegar
1-1/2 tablespoons soy sauce
3 tablespoons hot water

1/2 cup peanuts, chopped
1 lime, cut into wedges
1/2 cup cilantro, chopped

In a small saucepan, heat the peanut oil over medium-low flame. Add the green onions, ginger, and garlic. Cook and stir for a minute until soft and fragrant. Mix in the brown sugar, peanut butter, vinegar, soy sauce, and hot water. Stir until the sugar is dissolved and the peanut butter has smoothed out. Keep warm.

Cook the rice.

Get out your stir fry pan and heat up the oil. Take the chicken from the marinade and stir fry until done. About 5-7 minutes. Remove chicken from pan. Put the broccoli slaw and carrots into the pan and stir fry until it starts to wilt a bit (about 5-7 minutes). Place the chicken back in the pan with the peanut sauce. Get everything incorporated and nicely mixed together.

When the rice is done, place into large bowl. Add the stir fry on top. Top with chopped peanuts and cilantro, with the lime wedges along the side.
